Coffee Talk Tuesday (on Wednesday)

You got me.  It’s not Tuesday.  Nope, and that’s a good thing!  Yesterday I was just too excited to share my Valentine’s Cake with you all.  I figured it might be better to show it to you a little early, just so you could add it to your Valentine’s menu if it’s not finalized yet.

So now it’s time for coffee.  Thank goodness.  Things have been a little crazy here (read: a little caffeinated).  So it’s only appropriate we catch up with a little java.

This semester is really picking up.  We’re really getting into the bulk of grad school now.  My clinic is getting intense, which is awesome because I’m learning so much.  And classes are as busy as ever.  I really love all of it, but I definitely feel like I’m in grad school right now.  I just keep thinking back to last year when I was trying to plan a wedding on top of school and that helps.  If I could do that, I can do this.

I’m feeling the February blues big time right now.  Winter in the midwest is so long!  I know this winter has been pretty mild, but it’s still cold and gray.  I miss summer, sunshine and flip flops!  Josh and I have been talking about how we need to move somewhere warm when I’m done with school.  How nice would it be to go running in a t shirt and shorts outside year round?  Or leave the windows open?  I can dream, right?!?!   Maybe I need to take some Vitamin D to get me through the next couple months.

I promise you that I’ve eaten more than cookies and cake lately.  Even though that’s all I’ve posted.  My meals have included a ton of salads and soups, which are not exciting or photogenic in any way.  Pretty cakes and delicious cookies are much better.  I’ve also discovered that I struggle with the crock pot.  I’ve been trying to do the Crock Pot challenge where I make 10 crock pot meals by the end of February.  So far I’ve made 4 and 1 was a failure.  I find myself always making some form of shredded chicken.  I think it’s that we don’t really eat much meat besides chicken.  No beef, or pork.  I just don’t know how to prepare them well, and I don’t really crave that kind of thing ever.  Maybe I should do some research and make something with beef to make Josh a happy man.  Thoughts?

I’ve been loving these YouTube videos by Michelle Money and Laura Armstrong.  These girls are hilarious and have some great tips for makeup and hair.  They are so honest and completely uninhibited.  It’s the best!  I personally don’t have tons of money to spend on expensive makeup, but the techniques they have are awesome.

Charlie does this really funny and cute thing called “kneading”.  He lays on a blanket with some of it in his mouth and then makes a kneading motion with his paws.  I had no idea what he was doing, other than he always looks so sleepy while he’s doing it.  Then I looked it up and apparently it’s a self-soothing technique, like a baby sucking their thumb.  As far as I can tell he’s not going to grow out of it, but he’s not hurting himself or anyone else.  In fact, it’s pretty darn adorable.

  1. Where are you in the midwest nowadays? I just moved to Dayton, OH from Colorado Springs, CO (I know…you’re asking “but WHY!?!?!”. My hubs and I are in the military…not our call!!) and I am originally from FL. So don’t get me started on Winter!!! I’ve been taking a Vitamin D3 supplement and it seems to help with motivation in general. I also force myself to take the pup for an hour or so long walk on Sundays regardless of the weather. We just bundle up! That seems to help with the Vitamin D…the sun is always shining, we just can’t always see it…don’t forget that!

    My dog Beau likes to suck on his toys and let out a suuuuuper long drawn out howl…almost like he’s morning their death or something. It is pretty hilarious :-)

      Right now we live near (in a tiny little town) Iowa City, IA. I grew up in central Wisconsin so I should be used to the winter, but I think my blood is thinning. I think I’m going to look into the D3 supplement. My dad actually just found out that he is deficient and he spends a ton of time outside, even in the winter. I read that the sun is just too far away from us right now that it’s pretty hard to get enough that way.
      And I just laughed out loud about Beau! I wish I knew what was going in those tiny little brains. Pretty sure I could just sit and watch Charlie for hours and be entertained!

  2. I feel ya on the midwest blues!! I’m in Kentucky but northern Kentucky so I call it more so the Mid-South. I’m beyond ready for spring. I do enjoy my snow days but bring on the warm yet cool weather for running, being outside…

    What crockpot recipes have you made??

      I’m so glad I’m not the only one feeling this way right now. I can’t wait to run without a hat and gloves!
      I’ve made a buffalo chicken dip, breakfast casserole from Iowa Girl Eats, and curried butternut squash soup. I plan on doing a full recap post when I finish the challenge!

  3. I live in NC and get the winter blues- I can’t imagine how you feel! I grew up in Florida, so I miss the mild winters sometimes.
