Happy Father’s Day

Today is a day for all you dads out there.  To celebrate all that you have done and continue to do for your kids.

Unfortunately my dad is far away from me right now, and I am spending the day studying.  But that doesn’t mean that I can’t do something special for him.

My dad recently walked me down the aisle and “gave me away” to my loving husband.  I don’t really understand this saying though, “gave me away.”  Sure, he’s shed some responsibilities and is no longer the only man who takes care of me.  He no longer has to pay for my insurance, or change the oil the in my car.  But he still is my daddy.  He still cares for me, sends me walgreens/target care packages in the mail with bottles of “Propel”, and would give me everything he has and more to make me happy.  That will never change.

He told this story in his speech at our wedding where he would pick me up from kindergarten every day at noon and take me to day care.  Once I got to day care they would feed me lunch, but every day, without fail, I would proceed to eat the lunch my mom had packed for him  in the car.  I would eat his sandwich, string cheese, and drink his Coke.  I remember doing this too.  I don’t remember eating lunch at day care.  Whoops.  The man went back to work starving, until my mom figured it out and started packing more food for us.  Those times with my dad, eating his lunch in the Trooper, will stay with me forever.

There are a few other things about my dad that I think I inherited – his love for popcorn, beer, coffee, and ice cream.  He’s not much for sweets, but would never turn down a popsicle, or ice cream for dessert.  So last night, I ate ice cream, in honor of my dad.  We made special ice cream sandwiches, that I know he would have loved.  I plan on making them again in a few weeks when he comes to visit!

These ice cream sandwiches are a little different.  We made waffles for breakfast yesterday morning using Kodiak mix (which Target now carries!!!!)  I had a few leftover waffles, so I stuck them in the fridge and saved them for dessert.  It was kind of like ice cream in a waffle cone.  Brilliant.

When it was dessert time, I took out the waffles and toasted them.  Then I spread a little bit of peanut butter on them, covered them with some coffee ice cream, chocolate sauce and whipped cream.  Mmmmmmmmm!  I guess they are kind of like a mix between an ice cream sandwich (Josh put another waffle on top of his), a waffle cone, and waffles a la mode.  Delicious!  You could easily do this with frozen waffles too, if you don’t have home made ones.   Just toast them up before you add the ice cream.  I know that I fully plan on making extra waffles for breakfast from here on out.

Waffle Coffee Ice Cream Sandwiches

Ingredients

  • toasted waffles
  • 1 scoop coffee ice cream
  • chocolate sauce
  • whipped cream
  • peanut butter

Instructions

Spread toasted waffle with a thin layer of peanut butter

Put 1 scoop of coffee ice cream on top

Drizzle with chocolate sauce

Add a dollop of whipped cream if desired

Top with another waffle (if you want a sandwich), or just dig in
