Shamrock Monster Shake

Oh hello March. Can you please explain to me how you are already half way done? Can you also explain to me how this month is supposed to be all about green things but everything is still completely snow covered and frigid?

Seriously.  I mean I love wearing tall boots as much as the next girl, but I’m itching for cute dresses and sandals in a major way.

Good thing I fixed that for us.  At least the green part…

When I was growing up I couldn’t wait for March to come around because that meant it was Shamrock Shake season at McDonalds. As a mint lover at heart, I could not get enough of those bright green concoctions. I used to know when they started serving them in the year, and when they would stop.  Yes friends, it was bad.

Now I know [a little] better. While the shakes are still cool, creamy and delicious, my skinny jeans don’t appreciate them quite as much as my mouth does.

Enter the natural green power of spinach, protein powder, frozen bananas and just a touch of mint. Aka – shamrock monster shake. Aka – you can have a shamrock shake for breakfast and not even blink an eye.  That’s a win in my book for sure.

I used just a touch of peppermint extract to give the green monster that nostalgic minty flavor.  You have to be careful with this, as too much mint will make you feel like you’re drinking mouthwash.  Also mint extract is not the same as peppermint extract.  Trust me, I’ve made this mistake.

The mint also covers the flavor of the banana very well.  The frozen banana just acts as a wonderful base that is rich and creamy.  Very reminiscent of Mickey D’s.

Make these for breakfast, a snack or dessert.  Whatever floats your boat.  Just make them.  PS – they taste best in a fancy glass :)

Now, if we could only figure out where spring was…

 

Shamrock Monster Shake

Prep Time: 2 minutes

Ingredients (1 smoothie)

  • 1 c milk
  • 2 scoops vanilla protein powder (about 2 T)
  • 1/8 t peppermint extract
  • 1 frozen banana
  • 2 c fresh spinach
  • vanilla stevia drops (or sugar) to taste

Instructions

Blend all ingredients together on high until smooth

Pour into a fancy glass

Enjoy!

Chai Green Monster

Morning sunshines. This Wednesday is brought to you by green monsters. Those perfectly green glasses of goodness.

One of my first posts ever was a green monster. That same post also happens to be one of my most popular. When I was looking at some post statistics the other day I was trying to figure out why something that’s so simple is also everyone’s favorite (second to my wedding cake series of course).

I think the reality is that green monsters are scary delicious and healthy at the same time. I first saw the idea of a green monster on Angela’s blog and was intrigued, but didn’t believe that they could be good. Green things aren’t supposed to taste like the tropics, or cake batter. They’re supposed to taste… well… green. Maybe like grass?

Side note, does anyone love the smell of freshly cut grass? I LOVE that smell. I used to be all about the “Grass” perfume that Gap sold when I was in middle school. I would spray copious amounts all over myself, and everything I owned. People probably thought I was one giant walking allergy. Yikes!  Apparently this stuff is a hot commodity now.  $100 on amazon!!  I shoulda’ stocked up when I had the chance.

Ok, focus. Green monsters. They are delicious. I know that they are pretty much mainstream now, because they are a sneaky sneaky way to pack in nutrients.

This GM is inspired by my obsession with all things chai these days. (Blame it on the 3 pack of chai mix we bought at Cotsco). But it’s just so good!  It’s packed with iron, fiber, vitamins B6, A, K, E, calcium, magnesium, potassium, copper and protein.  Oh yeah, and it tastes like a chai latte.  Win!

It’s become my new go-to breakfast because I can pour it in a Tervis and have breakfast on the go.  Keeps me full all morning long.

Chai Green Monster

Prep Time: 2 minutes

Keywords: blender breakfast drink vegetarian high protein

Ingredients (2 smoothies)

  • 3/4 c milk (I used skim)
  • 1/3 c chai drink mix
  • 1 scoop vanilla protein powder
  • 2 very large handfuls of spinach (about 3 c. total)
  • 2 frozen bananas
  • pinch of xanthan gum (optional – it helps thicken the smoothie)

Instructions

Add all ingredients to blender in the order listed

Blend on high until spinach and banana are well blended

Pour into a pretty glass, or a to-go cup and enjoy!

Cake Batter Green Monster and ABCs

Cake batter for breakfast?  Why the heck not?!?!  Especially when that cake batter is in smoothie form and is green.

This kind of “cake” is cool, creamy, sweet, and full of protein, iron, vitamins and minerals, and sprinkles.  Ding ding ding!  We have a winner.

I feel a little silly for posting this, because it’s a pretty standard smoothie, just with the addition of almond extract.   But that little secret ingredient puts it over the top.  With the little crunch from the sprinkles, this tastes just like licking the bowl after you bake a birthday cake.

Cake Batter Green Monster

Prep Time: 2 minutes

Ingredients (2 large smoothies)

  • 2 1/2 frozen bananas
  • 1 1/2 c vanilla almond milk
  • 1/2 t almond extract
  • 1 large scoop vanilla protein powder
  • 2 handfuls fresh baby spinach
  • sprinkles

Instructions

Add all ingredients except for sprinkles to the blender

Blend on high 30 seconds-1 minute until ingredients are well blended and there are no spinach chunks left

Stir in sprinkles

Enjoy with a smile!

Now that we’ve made our smoothies, it’s time for some ABCs.  I saw this on Teri’s blog, who got it from Janetha.  I thought it would be fun to share some of the things I enjoy most in life with you (and practice my alphabet while we’re at it).

A – Almond butter (specifically this kind)

B – Bananas, I think I buy a dozen every time I go to the store, to eat for snacks, and freeze for smoothies

C – Coffee and chocolate (together, and separate.  I love my coffee in the morning, and if there is chocolate involved I’m extra happy)

D – Dark chocolate, the darker the betta’

E – Eggs with sriacha sauce

F – Fro Yo (white chocolate, chocolate, peanut butter, cake batter, raspberry… you name it)

G – the Gap , I am in L-O-V-E with everything in their summer line especially these pants in green

H – HauteLook This is one of my favorite places to buy clothes and accessories for cheap.  It’s like TJ Maxx or Marshalls, but online.

M – Mexican food and Margaritas, I can’t wait to enjoy both on our honeymoon in 16 DAYS!

O – Oatmeal, specifically whipped steel cut oats, I can’t wait for it to be not so hot so that I can eat hot oats again

R – Reese’s peanut butter cups, my weakness, have you tried them on s’mores?

S – Sweet Potatoes, usually in fry form, with some cumin and cayenne pepper involved (aka not whipped with brown sugar and cinnamon)

T – Taylor Swift, she’s just so sweet I can’t help but love her

U – Up (the movie), that little old man is do cute, the boy with the lisp, and that dog…

V – Veggie burgers

W – Waffle Ice Cream sundaes

X – xtra large pours of wine (Teri’s great idea)

PB&J Green Monsters

If you follow me on Facebook or Twitter you might already know, but I got a new power tool last week Friday.

This, my friends, is the Ferrari of all blenders.  It’s strong, and loud, and powerful.  I’m fairly positive I could put some nails into this puppy and it would turn them into soup for me.

The VitaMix website actually sells refurbished blenders for a fraction of the cost of the original so we got a pretty good deal on ours.  My mom has a refurbished one and absolutely loves it.  It also came with a 5 yr warranty, so that’s pretty good in my book.

With summer in full force, and my new toy, you can expect to see a lot of blender recipes coming up.  I’ve made smoothies/green monsters for breakfast every day this week so far!

Oh yeah, and the best part of this blender is that it pretty much cleans itself.  Just put a little soap and some water in, turn it on and walk away.  Those are my kind of dishes :)

This green monster was the result of a pb&j craving I was having the other day.  I figured, why not see if I can turn it into a smoothie.  And it worked!  It was a nice variation on the traditional fruity green monster that I’m used to drinking/eating.

I used powdered peanut butter to cut down on the fat in the recipe, but if you don’t have any feel free to use regular peanut butter too.  It will work great, I’ve tried that way too.

 

PB&J Green Monster

Prep Time: 2 minutes

Ingredients (1 large smoothie)

  • 1 c milk (I used vanilla almond milk)
  • 1/4 c powdered peanut butter (or 1 T creamy pb)
  • 1 frozen banana
  • 8 frozen strawberries
  • 2 handfuls spinach

Instructions

Add ingredients in the order listed to blender

Blend on high about 1 minute, until smooth, adding additional liquid if necessary
