Hello folks. It’s Friday!!!! Woooo hoooo!!!!! We made it through this week.
All of these record setting high temperatures have led to record setting low cooking motivation for me. The thought of turning on my oven makes me cringe. Our AC has been working overtime and I don’t need to add a 400 degree oven to the mix. So meals this week have involved little to no cooking. Salads, sandwiches, and soups. Yes, that’s right, soups.
After getting my Vitamix a month ago I read the manual that came with it. Apparently if you run the blender on high for 5-6 minutes it will actually heat something up and cook it! Mind. blown. I tried a taco soup from the Vitamix cookbook that was pretty good, so I knew it could work.
Sure enough, I threw together this soup in less than 2 minutes. Turned on the blender. And walked away. I like a little texture in my soup (read – I load it up with crackers to the point that I chew it) so I added extra black beans and corn at the end to give the soup some chew factor.
It turned out awesome! So flavorful and easy. I loved how smooth and creamy the soup turned out from the blender. If you don’t have a blender that has a 2 hp motor (aka- most of you) you can still make this soup. Just cook everything on the stove top like normal, then throw it in the blender to puree it, or use an immersion blender if you have one.
And I have a confession to make. I took this as leftovers one day this week and had to eat the soup cold because I didn’t have a working microwave and it was still awesome!
Black Bean and Corn Bisque

Cook Time: 10 minutes

Ingredients (6 servings)
- 2 1/2 c low sodium chicken broth
- 1 1/2 cans black beans
- 2 ears corn kernels (about 1 1/2 c)
- 1 carrot, cut in half
- 1/3 yellow onion
- 1 stalk celery, cut in half
- 1/2 jalapeño, seeds included
- 10 cherry tomatoes
- 1/4 t oregano
- 1/4 t cayenne pepper
- 1/4 t parsley
- 1 t cumin
- 1 t hot chili powder
- 1/2 t sea salt
- 1/2 can black beans
- 1 ear corn kernels
- plain greek yogurt
- fresh cilantro to garnish
Instructions
Add all ingredients to VitaMix blender in the order listed
Start blender on low variable speed
Gradually increase speed until you get to high
Switch over to high
Let run 5-6 minutes on high until steam comes out the top of the blender
Stir in 1/2 c whole beans and 1/2 c corn kernels
Pour in bowls, stir in a dollop of greek yogurt, garnish with cilantro
Enjoy with quesadillas dipped in, or crunched up tortilla chips
