Do you guys remember having pen-pals in second grade? You would magically get paired with someone across the country (or world) and you would write letters back and forth sharing about your little life. Usually my letters included tons of glitter and Lisa Frank stickers, just to glam things up a bit.
Well, I haven’t had a pen pal in years, but I do have a Bakin’ Friend, which is even better! Steph, from Steph’s Bite By Bite organizes this group and matches everyone up. You get paired with someone and have to bake them yummy treats using a secret ingredient. Then you ship things off and cross your fingers that your cookies won’t be crumbled when they arrive to your pal.
This month’s ingredient was dark chocolate. Perfect for Valentine’s Day, and heart month!

I was so pumped the day they arrived at my door and tore into the box to see this wonderful fun box. Full of Valentine’s goodies. (Better than Lisa Frank!)
I loved the dark chocolate flavor of these cookies and could not stop eating them. Oh and can you see that sea salt on the top. To die for!

Dark Chocolate Cookies with Sea Salt

Cook Time: 13 minutes
Keywords: bake dessert cookie
Ingredients (2 dozen cookies)
- 1 c flour
- 2/3 c unsweetened cocoa powder
- 1/2 t baking soda
- 1/2 t kosher salt
- 1/2 c unsalted butter
- 2 c dark chocolate chips
- 1 c semi sweet chocolate chips
- 1 1/2 c sugar
- 2 eggs
- 2 t vanilla
- sea salt for sprinkling
Instructions
Preheat oven to 325 degrees
Sift together flour, cocoa powder, salt and baking soda – set aside
Melt together butter and 1 c semi sweet chips, melt in microwave for 20 second intervals until smooth and shiny
Beat together melted chocolate, sugar, eggs and vanilla
Add the flour mixture
Fold in dark chocolate chips
Dorp dough on parchment lined baking sheets
Bake for 13-15 minutes
Careful not to over bake, tops of cookies will appear to crack
Sprinkle with sea salt immediately upon pulling them from oven
Cool completely on wire rack










That is so fun! I would love to do something like that with you all
(although I have dietary limitations of course…but I can still bake some mean glutenful cookies!!)

It is such a fun program. You actually email your baking friend when you get matched with any dietary restrictions. I think there may be a few gf girls in the mix already!
